Scroll to Item tax info
The default setting is Use project tax settings, change that to the tax you wish to use. If you’d like you can also create a new one.
Now the tax emanating from that item will be calculated using the settings you just set, you can see the red tax icon on the item indicating it has a custom tax setting.
